Easy Clean Eating Egg Bites

My Daughter and I love making egg bites together.  We get to be creative with what we have in the fridge to add as our filling, but we always have ham and spinach on hand!

These little guys are good in the fridge for a couple days, or you can freeze for up to 3 months.
Ingredients
  • 5 1/2 lbs sweet potatoes, peeled
  • 3/4 cup 1% milk
  • 1/2 tsp kosher salt
  • 1/4 tsp ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 tsp kosher salt

PREP TIME

15 minutes

COOK TIME

20 minutes

Instructions

1. Preheat oven to 350 degrees.
2. Whip eggs, cream, milk and a pinch of salt and pepper. 
3. Add your filling of choice.  We added cheese, ham and spinach.
4. Spray your muffin pan with a non-stick spray.  We prefer Chosen 100% avocado oil spray.
5. Using your 1/2 cup fill the muffin tin.

6. Bake for 20 minutes or until fully cooked through.
